1-1/4 cups softened butter
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon (optional)
3 cups McCann's Quick Cooking Irish Oatmeal (or another brand, I used 2 cups of oatmeal)
3/4 cup raisins
1/2 cup chopped walnuts
1. Preheat oven to 350 degrees F.
2. In a large bowl, cream the butter and sugars. Add egg and vanilla extract.
3. Combine flour, baking soda, salt and cinnamon. Add the butter to mixture also. Mix together.
4. Stir in McCann's oatmeal or any other oatmeal, then stir the raisins and walnuts.
5. With a spoon or cookie dough scooper put on an ungreased cookie sheet.
6. Bake for 12-15 minutes at 350 degrees. Cool for 1 minute before removing to wire cooling rack.
